Plain pretzels are one of the easier snacks for gout. They are wheat flour, water, salt and a little yeast, and wheat-flour foods measure 12 to 26 mg of purines per 100 g in the USDA/ODS-NIH purine database (white bread 12, baguette 16, bread flour 26), against 131 to 289 for chicken breast. They carry no fructose. Two things change that on US labels. Of 2,568 pretzel products with an ingredient list, 11% list a fructose sweetener, and 212 of those are honey, mostly honey-mustard and honey-wheat styles. And 8% list yeast extract, concentrated in cheddar, buffalo and ranch seasoned pieces. The median pretzel runs 714 mg of sodium per 100 g, which is not a purine issue but matters if you are also managing blood pressure.
Plain salted or unsalted pretzels: no fructose sweetener, no yeast extract and purine levels in the bread range. Peanut-butter filled pretzels are fine too if the filling lists peanuts and salt rather than sugar or corn syrup.

Plain pretzels are a safe snack for gout: wheat flour, water and salt, with purines in the bread range (12 to 26 mg per 100 g in the USDA database) and no fructose. They are not a health food, but on the two things that matter for uric acid they are clean.
Not the plain ones. The pretzels to skip are honey mustard and honey wheat, which add a fructose sweetener (honey appears on 212 US pretzel labels), and cheddar, buffalo or ranch pieces seasoned with yeast extract, which we found on 8% of US pretzel products.
Very few. Pretzels are not listed separately in the USDA/ODS-NIH purine database, but the foods they are made from are: white bread measures 12 mg of purines per 100 g, a baguette 16 and bread flour 26, against 131 to 289 for chicken breast. The small amount of yeast in the dough is diluted to nothing.
They are the pretzel style to avoid. Honey is a fructose sweetener, and fructose is the dietary sugar most consistently linked with higher uric acid. Honey-mustard pieces often add yeast extract in the seasoning as well. Plain salted pretzels are the swap.
Usually. Peanuts measure 49 mg of purines per 100 g, a low value, and the pretzel shell is lower still. Check the filling: some list sugar, corn syrup or honey. A filling of peanuts, oil and salt is the gout-friendly version.
